For more than 10 years, winemaking at David Bruce Winery has been
led by an experienced team of loyal winemakers who share the founder's
passion for excellence. The winemaking process is comprised of unique
gentle-handling techniques-from picking in the fields to bottling.
Many of these methods have been custom-designed by the winery for
the handling of pinot noir, whose delicate nature requires careful
treatment. In the European tradition, crushing in the past at David
Bruce was done by foot to promote a gradual crush. Today, other
techniques-including a pneumatic punch-down tool and rotary fermenters-are
used to replicate the effects of foot crushing. Winemaking decisions
at David Bruce are made collaboratively during weekly tastings held
by the principal managers of the winery.
